Breakfast and Brunch

This recipe was probably my favorite dish that I served at the blogger brunch I hosted at the Amsden.  It is so perfect for cozy winter mornings, snow days, or Valentine's day festivities as well.  The tartness and fresh flavor of the raspberries perfectly cuts the sweetness and rich flavor of the french toast.  Baking this dish after soaking the bread overnight makes it perfectly flavorful and melt-in-your-mouth soft and doughy. Click here for this recipe.

No brunch spread is complete without a quiche!  This delicious savory quiche includes a one of my favorite combos: spinach + feta.  It's the perfect balance to all the sweet dishes and treats I served at our blogger brunch and was definitely the dish I got the most compliments on!  I used a frozen pie crust to make this recipe even quicker and easier, but if you prefer to make your own crust from scratch that's always an option. Click here for this recipe.

If you're looking for a sweet brunch treat that's just as easy as it is beautiful- this is for you!  These mini individual parfaits are perfect for serving at showers or brunches and you can customize them for any size group.  You could also just make them for yourself and store them in the fridge for an easy to grab breakfast or snack! Click here for this recipe.

Mimosas are a necessity for any brunch and this is such a fun and easy station to set up for a party or event.  Your guests will love being able to customize their own mimosas with different juices and fruit garnishes.  Special thanks to the Lexington Whole Foods for donating all the champagne, juice, and fruit for our mimosa bar at the brunch!  Their fresh squeezed OJ was so delicious and made the best mimosas!  Click here for this recipe.

Sometimes I feel like I should maybe just create a whole blog dedicated to my love of cheese and charcuterie boards!  I have shared so many different charcuterie board ideas, and recipes over the years on here and it truly is my favorite meal both to serve and eat!  Not only is it easy to prepare but I love how you can really wow guests with the overall presentation, PLUS it feeds a large crowd easily. I wanted to put a twist on my usual charcuterie board for a Saturday morning event, and the bagel brunch board was born! Seriously who doesn't love bagels with alllll the fixings?! I included everything you need for both savory and sweet bagels and once I got going picking out ingredients, it was hard to stop! There are so many possibilities for this and I love that you can personalize it to your preferences or whatever your crowd may like. Click here for this recipe.

What's better than banana bread? Banana bread with dark chocolate AND raspberries! If you can't ever seem to eat all your bananas before they turn brown (like me), it's a perfect excuse to whip up this delicious, sweet breakfast bread. Just about everything is better with chocolate and the addition of raspberries not only give this bread a beautiful color but also a touch of tartness that it needs. It is so moist when done and practically melts in your mouth! Click here for this recipe.

Appetizers and Salads

With Easter approaching, I decided to round up some unique and delicious ways to serve Easter brunch's most popular dish- deviled eggs. In the south, deviled eggs are a staple potluck item year round. I've included the classic southern recipe below, but also 5 different twists on the dish with different toppings and flavors. All are equally delicious and create quite a beautiful display when arranged all together! Click here for this recipe.

There are few things I love more for spring than a super bright, fresh salad.  This burrata, asparagus, and prosciutto salad is the perfect appetizer spread for a crowd. but is also hearty enough to eat as a weeknight meal.  Creamy burrata is topped with delicious basil pesto and layered on top of peppery arugula, roasted asparagus, salty prosciutto, cherry tomatoes, and perfectly sweet melon balls.  The salad is served with a side of warm, crusty bread that is perfect for scooping up your favorite combination of ingredients. Click here for this recipe.

This beautiful spring weather makes me want to sit on the patio every night and eat delicious salads for dinner! Last year around this time I shared 3 of my favorite salad recipes. These are all super filling salads overflowing with the most delicious ingredients. If you are looking for a super easy dinner or a way to mix up your normal salad routine, check these out! Click here for these recipes.

I'm typically not a huge fan of fruit in salads but something about spring puts me in the mood for this combo. This salad has a few of my favorite things: Parmesan, prosciutto, peaches, and pecans. The flavors work together perfectly, especially the sweetness of the peaches and pecans with the saltiness of the prosciutto and Parmesan! The lemony vinaigrette is a perfect light and fresh dressing for any spring salad and is the perfect topping for this one as well. Click here for this recipe.

Snacks and Cheese Boards

If you’ve been following me for any length of time, you know I absolutely love putting together cheeseboards for any occasion and any holiday! Of course, I also had to put one together for Easter and loved the fun spring colors and foods I was able to incorporate into this one. If you are hosting an Easter gathering for your family or friends, this is a perfect way to serve a variety of snacks and is fairly easy to assemble too. Click here for this recipe.

I never turn down a good opportunity to put together a giant cheeseboard! This extra large spring grazing board had all the beautiful bright spring colors and textures to really make a statement. You can find all the ingredients for this one and instructions for assembling here!

Admittedly I am NOT a fan (at all!) of St. Patrick’s Day, BUT I do love spring colors and rainbows, so I decided to put my own twist on a fun St. Patrick’s Day snack mix! Like my other snack mixes, this one is a delicious sweet and salty mix perfect for the whole family or a party! You can enjoy this one all spring long and it will definitely brighten up your table or kitchen so much! Click here for this recipe.

Your little ones will LOVE this easy, festive, delicious Easter Bunny Snack Mix, and you will, too! With only about a handful of ingredients, you can quickly create this snack for any Easter event or just for you to snack on at home! Get the full recipe by clicking here!

Every holiday deserves an extra large grazing board - and Easter is no exception! While I created this board for a “Hoppy 1st Birthday” party for my friend’s little boy - it would be perfect for any Easter gathering! I love how beautiful this board turned out; it was the perfect mix for snacking with lots of veggies! I also added extra fun touches with Easter candies like the Peeps and milk-chocolate carrots. You can get the full details of ingredients and instructions by clicking here!

You know I am a lover all of the cheeseboards, especially if they are holiday themed! This Easter Bunny Veggie + Cheese board is a super fun and easy way to celebrate the season. You can use all your favorite fruits, veggies, cheese, and crackers to create the cutest bunny. I also like to include my favorite Spinach Parmesan Artichoke dip, too! Meals

Caprese is the perfect fresh summer dish whether it be in its traditional appetizer form or a bright and light pasta. This caprese pasta with marinated tomatoes is not only a great way to use fresh herbs and produce from your garden or the farmer's market, but it also makes a great side dish for picnics, cookouts, or barbecues. This is another recipe I have fallen in love with after trying it from one of Southern Living's summer issues. It's too easy (and delicious) not to try! Click here for this recipe.

I'm always looking for new and interesting healthy recipes so that we aren't eating boring meals every night. Baked meatballs (made with beef + pork) have been one of my go-to recipes in the past but I have never tried making chicken meatballs. When I came across this recipe for chicken feta meatballs from How Sweet Eats, it sounded too good not to try! I'm obsessed with feta and we eat it constantly on both our salads and vegetables for dinner. I made a few tweaks to the recipe and added a few ingredients to make it my own, and I was shocked at how good they turned out and how easy the entire recipe was! Click here for this recipe.

This veggie loaded casserole has a little bit of everything and is the perfect easy, quick, and healthy weeknight meal! Seasoned roasted vegetables and chicken are layered up with black beans, fresh cilantro, salsa, tortillas, and topped with plenty of cheese! I love the extra flavor and texture that the roasting adds to the vegetables- the roasting method I used in this recipe is my favorite way to cook veggies for any meal! Click here for this recipe.

When I saw this recipe in May's issue of Southern Living, I thought I would try my luck with pork chops again. They looked too good in the photos, and the recipe sounded so delicious, that I didn't think I could go wrong (and I was right)! This marinade added so much flavor and baking the pork chops made them so juicy and the perfect consistency. I made a couple of changes and additions that I really think take this recipe over the top. This is such a great healthy, easy, and quick dinner that you can whip up in no time for the entire family! Click here for this recipe.

I admittedly RARELY go this all out for my child’s lunch, but it is fun to every once in awhile! There are lots of fun ways to arrange food you probably already have in your house to create a Spring lunchbox or picnic for your little one (or yourself, no judgment!) This is also a great way to make healthy snacks more fun for picky eaters! Click here to get the full details!
