Spring Peach, Prosciutto, + Parmesan Salad

     I'm typically not a huge fan of fruit in salads but something about spring puts me in the mood for this combo.  This salad has a few of my favorite things: Parmesan, prosciutto, peaches, and pecans.  The flavors work together perfectly, especially the sweetness of the peaches and pecans with the saltiness of the prosciutto and Parmesan!  The lemony vinaigrette is a perfect light and fresh dressing for any spring salad and is the perfect topping for this one as well.  You can find all the ingredients + instructions for pulling this together below!

Salad

4 cups baby spring mix
1 large or 2 small peaches, stone removed and sliced
4-6 slices prosciutto
1/3 cup Parmesan, shaved
1/4 cup pecan halves, toasted

Lemony Vinaigrette Dressing

2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Dijon mustard
1 tablespoon extra virgin olive oil
1/4 teaspoon honey

1. Combine all the vinaigrette ingredients together in a small bowl and whisk to combine.  

2. Fill a salad bowl with the spring mix.

3. Top with peaches, prosciutto, Parmesan, + pecans. 

4. Drizzle with vinaigrette then toss to combine ingredients and coat the salad.

5. Serve!
