I have been dying to do a giant table-size charcuterie spread forever and earlier this summer, I finally got the opportunity while helping one of my client’s with her daughter’s graduation open house. This charcuterie was classic and summery with lots of fruit and bright colors! You can really customize the ingredients to whatever you like or have available. The Most Extra Italian Pasta Salad
Go ahead and file this one under my favorite summer recipes- it’s that good! Pasta salad is one of my favorite summer dishes and I especially love Italian ingredients in pasta salad. I started out wanting to make a basic summer Italian pasta salad but just kept finding more and more ingredients I wanted to add! I decided to just throw every possible favorite ingredient I could think of into one super extra Italian pasta salad. It has a little bit of everything- crispy pancetta, salami, pepperoni, toasty pine nuts, roasted red peppers, sun dried tomatoes, fresh arugula and tomatoes, feta AND mozzarella cheese, and a perfectly light and tangy lemony oil and vinegar dressing. DIY Mini Summer Cheeseboards
How fun are these single serving summer charcuterie boards?! This past weekend I hosted a cheeseboard workshop where each attendee got to follow along and make their own board. I typically make giant boards and demonstrate in front of everyone, but this is another fun format for my cheeseboard workshops where everyone actually gets to participate throughout. Summer Fresco Steak Tacos
Tacos have always been one of our favorite quick summer meals and it seems like we’ve been eating some version of these at least once a week lately! This recipe is for super simple yet delicious summer steak tacos piled with tons of fresh ingredients and flavors. You can use any kind of steak really for this recipe but flank steak works best. We actually went ahead and grilled a one pound flank steak and even had half left over for extra recipes (steak salads anyone?)! You can really customize this recipe with your favorite toppings but I like to keep it simple so all the ingredients and flavors can really shine! Let me know how you like them!
