The Most Extra Italian Pasta Salad

Go ahead and file this one under my favorite summer recipes- it’s that good! Pasta salad is one of my favorite summer dishes and I especially love Italian ingredients in pasta salad. I started out wanting to make a basic summer Italian pasta salad but just kept finding more and more ingredients I wanted to add! I decided to just throw every possible favorite ingredient I could think of into one super extra Italian pasta salad. It has a little bit of everything- crispy pancetta, salami, pepperoni, toasty pine nuts, roasted red peppers, sun dried tomatoes, fresh arugula and tomatoes, feta AND mozzarella cheese, and a perfectly light and tangy lemony oil and vinegar dressing. Summer Penne with Roasted Tomatoes, Mozzarella, Salami, + Arugula

      I've said it before, but some of my all-time favorite recipes come from Southern Living magazine, particularly their summer issues.  This is another favorite that I tweaked the instructions for just slightly, but overall kept the ingredients pretty much the same.  The simple balsamic and olive oil penne pasta base is so light, flavorful, and perfect for summer.  It also allows the dish to be able to be served both hot or cold, and makes it compatible with a variety of different ingredients if you want to switch it up!  This is a great "clean out your fridge" pasta as you can customize it as you want with any kind of cold cuts, Italian cheese, and roasted vegetables.

Sausage + Quail Egg Pizza

      This pizza was completely spontaneous, as we just walked through the farmer's market and picked out ingredients that we loved and thought would go well together.  We ended up with crumbly Italian sausage, fresh basil, over easy quail eggs, melty Italian cheeses, tomato sauce, and fresh cracked pepper over a crispy garlic and herb crust.  We often order a pizza at one of our favorite Italian restaurants in Charleston that has quail eggs and it is SO good!  The combination of the sausage, eggs, and cheese is perfect as the sausage adds a little spice and robust flavor while the eggs are perfectly mild with a unique texture.  As mentioned above, we found our quail eggs at the local farmer's market, but I believe they often have them at Whole Foods too or check your local specialty grocery.  They are perfect for topping pizzas or flatbreads because of their petite size and mild flavor.
