Homemade Buttermilk Biscuits with Crockpot Apple Butter + Country Ham

There’s nothing more comforting for fall than homemade apple butter and buttermilk biscuits! Add in some country ham, and this unexpected combination is the perfect mix of sweet and salty and such a good autumn breakfast option, snack, or lunch! The apple butter could not be easier to make as you literally just throw everything in the crockpot and let it do all the work! I really worked with the amounts of sugar and spices to get just the right blend so it’s not overly sweet and you can taste the apple flavor even more. I also used this apple butter on my autumn cheeseboard and it was the perfect compliment to both sharp and milder cheeses. I love this biscuit recipe as well because they are perfectly fluffy, just the right amount of salty, and a little crisp on the edges.

Classic Fall Chili Recipe

I’ve been craving all the comfort foods at this stage in my pregnancy and I’m so excited to start making all my favorite fall recipes. I don’t know how I made it this long without sharing this chili recipe, but it’s one of my favorite dinners for fall and winter. This chili is no fuss and nothing fancy, but so hearty and delicious! My secret is using half ground pork and half ground beef for extra flavor. This chili has just the right amount of spice and seasoning without being too overpowering. You can serve with or without spaghetti and customize with your favorite toppings (I’ve listed mine below).

Sausage + Quail Egg Pizza

      This pizza was completely spontaneous, as we just walked through the farmer's market and picked out ingredients that we loved and thought would go well together.  We ended up with crumbly Italian sausage, fresh basil, over easy quail eggs, melty Italian cheeses, tomato sauce, and fresh cracked pepper over a crispy garlic and herb crust.  We often order a pizza at one of our favorite Italian restaurants in Charleston that has quail eggs and it is SO good!  The combination of the sausage, eggs, and cheese is perfect as the sausage adds a little spice and robust flavor while the eggs are perfectly mild with a unique texture.  As mentioned above, we found our quail eggs at the local farmer's market, but I believe they often have them at Whole Foods too or check your local specialty grocery.  They are perfect for topping pizzas or flatbreads because of their petite size and mild flavor.

Summer Garden Veggie + Pesto Pizza

 Summer is the perfect time for homemade pizza piled high with fresh produce from the garden!  This summer pizza features fresh roasted vegetables on top of a garlic butter pesto sauce base and smothered with plenty of melty cheese.  I also added some bits of fresh basil on top for extra flavor and color.  Overall this pizza is super light, flavorful, and bright and so perfect for an easy summer dinner!   We got all our vegetables and basil from the local farmer's market and I used Trader Joe's fresh garlic and herb pizza dough which makes at-home pizza making so easy and delicious!

 I'm typically not a huge fan of fruit in salads but something about spring puts me in the mood for this combo.  This salad has a few of my favorite things: Parmesan, prosciutto, peaches, and pecans.  The flavors work together perfectly, especially the sweetness of the peaches and pecans with the saltiness of the prosciutto and Parmesan!  The lemony vinaigrette is a perfect light and fresh dressing for any spring salad and is the perfect topping for this one as well.  You can find all the ingredients + instructions for pulling this together below!

Burrata, Asparagus, + Prosciutto Salad

 There are few things I love more for spring than a super bright, fresh salad.  This burrata, asparagus, and prosciutto salad is the perfect appetizer spread for a crowd. but is also hearty enough to eat as a weeknight meal.  Creamy burrata is topped with delicious basil pesto and layered on top of peppery arugula, roasted asparagus, salty prosciutto, cherry tomatoes, and perfectly sweet melon balls.  The salad is served with a side of warm, crusty bread that is perfect for scooping up your favorite combination of ingredients.  There are so many layers of flavor in this dish and possible combinations to try with each bite!  We served this as an Easter brunch appetizer and it was the perfect starter for our meal.  It's also SUPER quick and easy to throw together!  I can see this being a regular meal this summer on the patio for sure!
