Sausage, Kale, Tortellini + Roasted Red Pepper Tomato Soup | Easy Trader Joe's Dinner Recipe
If you’ve been following along for a while, you know that I love shopping at Trader Joe’s especially for quick and easy dinner options. I’ve shared lots of Trader Joe’s recipes here but by far my most popular is my quick, 2-ingredient tortellini and roasted red pepper tomato soup. I decided to do a new twist on this recipe and bulk it up a bit by adding sausage and kale as well as diced onion and some extra diced tomatoes. I didn’t think it could get much better than my original recipe, but this one tops it for me!
Fun + Festive Halloween Cheeseboard
Halloween is just a week away and every year I love to make as many fun recipes as possible leading up to the holiday! So over the next week, I’m bringing you not one, but two, different takes on festive Halloween snack boards! This board is more along the lines of a traditional cheeseboard with the ingredients although I did make a few unexpected sweet additions! I tried to keep the overall color palette Halloween themed with plenty of pops of orange and lots of dark purple, chocolate, and bits of white. The end product is super bright + playful (not to mention tasty) and so perfect for celebrating Halloween!
10 Easy Fall Dinner Recipes
It’s my favorite time of year for cooking, so I’ve gathered up my all-time favorite fall dinner recipes from the blog over the past several years. These are all super easy and delicious, full of fall ingredients and flavors, and perfect for autumn entertaining. I’ve linked all the individual recipes from our blog, as well as a short description of each dish for you to check out below! Let me know what your favorites are!
Classic Fall Chili Recipe
I’ve been craving all the comfort foods at this stage in my pregnancy and I’m so excited to start making all my favorite fall recipes. I don’t know how I made it this long without sharing this chili recipe, but it’s one of my favorite dinners for fall and winter. This chili is no fuss and nothing fancy, but so hearty and delicious! My secret is using half ground pork and half ground beef for extra flavor. This chili has just the right amount of spice and seasoning without being too overpowering. You can serve with or without spaghetti and customize with your favorite toppings (I’ve listed mine below).
Easy Crockpot Autumn Spiced Nuts
I made these autumn spiced nuts for my autumn cheeseboard workshop and they were a huge hit! I had made spiced nuts for the holidays in the oven before but this crockpot recipe was so much easier and actually dispersed the flavor a lot better. It also will fill your whole home with the smell of autumn which is a huge plus! The nuts have the perfect balance of sweet and salty ingredients and spices making them an easy snack or appetizer pairing. This recipe also makes such a quick and easy homemade gift for party favor!
Summer Penne with Roasted Tomatoes, Mozzarella, Salami, + Arugula
I've said it before, but some of my all-time favorite recipes come from Southern Living magazine, particularly their summer issues. This is another favorite that I tweaked the instructions for just slightly, but overall kept the ingredients pretty much the same. The simple balsamic and olive oil penne pasta base is so light, flavorful, and perfect for summer. It also allows the dish to be able to be served both hot or cold, and makes it compatible with a variety of different ingredients if you want to switch it up! This is a great "clean out your fridge" pasta as you can customize it as you want with any kind of cold cuts, Italian cheese, and roasted vegetables.
