Sausage, Kale, Tortellini + Roasted Red Pepper Tomato Soup | Easy Trader Joe's Dinner Recipe

If you’ve been following along for a while, you know that I love shopping at Trader Joe’s especially for quick and easy dinner options. I’ve shared lots of Trader Joe’s recipes here but by far my most popular is my quick, 2-ingredient tortellini and roasted red pepper tomato soup. I decided to do a new twist on this recipe and bulk it up a bit by adding sausage and kale as well as diced onion and some extra diced tomatoes. I didn’t think it could get much better than my original recipe, but this one tops it for me! The flavors are amazing and this soup is so hearty and delicious- literally the perfect cozy winter meal! I love the addition of kale to soup because unlike some other greens, like spinach, it doesn’t taste bitter and disrupt the rest of the flavors (and it also adds a little texture!). The crumbly sausage adds the perfect amount of spice and robust flavor that compliments the red pepper and tomato soup perfectly! Be sure to top it with some shaved Parmesan cheese and a couple of Trader Joe’s Parmesan crips (so yummy!). You can find the easy instructions and all ingredients listed below!

2-3 tablespoons minced garlic

1/2 cup olive oil

1/3 cup diced yellow or white onions

2 (10 ounce) packages of cheese tortellini (I used Trader Joe’s brand but any brand will work)

1/2 lb. ground Italian sausage

1 (14.5 ounce) can diced tomatoes

1 box (32 oz) Trader Joe’s Organic Tomato and Roasted Red Pepper Soup

1-2 cups roughly chopped kale

optional toppings: shaved Parmesan cheese and Trader Joe’s Parmesan Crisps

  1. Heat a pan to medium and add your olive oil and garlic. Cook until fragrant, for about 2-3 minutes, stirring constantly.

  2. Add in the onions and reduce heat to a simmer. Continue to cook for 5-8 minutes, stirring constantly.

  3. Cook your tortellini according to package instructions while your onions are continuing to simmer.

  4. Add your sausage to the onion/garlic mixture and cook until browned, turning heat up to medium.

  5. Add in the canned tomatoes, soup, and tortellini and stir to combine. Cook on medium heat for about 10 minutes until warm throughout, then reduce to simmer.

  6. Add in kale and stir to combine. Continue to simmer for 10 more minutes (or longer if you wish- just be sure to keep stirring!).

  7. Sprinkle with 1-2 teaspoons each salt and pepper to taste. Serve with Parmesan cheese and Trader Joe’s Parmesan Crisps!
