The Most Extra Italian Pasta Salad
Go ahead and file this one under my favorite summer recipes- it’s that good! Pasta salad is one of my favorite summer dishes and I especially love Italian ingredients in pasta salad. I started out wanting to make a basic summer Italian pasta salad but just kept finding more and more ingredients I wanted to add! I decided to just throw every possible favorite ingredient I could think of into one super extra Italian pasta salad. It has a little bit of everything- crispy pancetta, salami, pepperoni, toasty pine nuts, roasted red peppers, sun dried tomatoes, fresh arugula and tomatoes, feta AND mozzarella cheese, and a perfectly light and tangy lemony oil and vinegar dressing. DIY Salad Bar Board for a Crowd | Easy Entertaining Meal
I recently made this salad board for one of our Christmas parties and I’m kind of kicking myself that I hadn’t thought of this sooner! It really is such an easy way to entertain for a crowd and feed a lot of people without a lot of prep! It also works especially well if you have guests with certain food allergies, sensitivities, or preferences because everyone can make their own salad with the ingredients they want. This can also be customized a million different ways with all kinds of different ingredients! Mine leans more towards an Italian salad with the ingredients but there are so many different possibilities for this!
Spring Peach, Prosciutto, + Parmesan Salad
I'm typically not a huge fan of fruit in salads but something about spring puts me in the mood for this combo. This salad has a few of my favorite things: Parmesan, prosciutto, peaches, and pecans. The flavors work together perfectly, especially the sweetness of the peaches and pecans with the saltiness of the prosciutto and Parmesan! The lemony vinaigrette is a perfect light and fresh dressing for any spring salad and is the perfect topping for this one as well.
