Easy Pantry Pizzas
I wanted to share an easy and favorite recipe that you can easily make using whatever leftovers you may have in your fridge and pantry! There are a couple of options for the crust. I used Trader Joe’s pre-made flatbread pizza crust (available in the bread section). However, Trader Joe’s also has great pizza dough, but it will require an extra step when preparing these pizzas. If you don’t have pizza dough available, you can use any kind of French bread, baguette, flatbread, or naan that you have!
Cheesy White Lasagna with Spinach + Crispy Prosciutto
Winter always puts me in the mood for cozy dinners and comfort food, and this lasagna definitely fits the bill for both. This recipe has layers of alllll the cheese but it’s also perfectly balanced by the crispy, salty prosciutto and the brightness of the spinach and fresh basil. Also apparently I’ve been living under a rock because this is my first time trying the “oven ready” lasagna noodles that you don’t even have to boil prior to baking. It makes this recipe even easier, just one more reason to make more lasagna!
Spring Peach, Prosciutto, + Parmesan Salad
I'm typically not a huge fan of fruit in salads but something about spring puts me in the mood for this combo. This salad has a few of my favorite things: Parmesan, prosciutto, peaches, and pecans. The flavors work together perfectly, especially the sweetness of the peaches and pecans with the saltiness of the prosciutto and Parmesan! The lemony vinaigrette is a perfect light and fresh dressing for any spring salad and is the perfect topping for this one as well. Burrata, Asparagus, + Prosciutto Salad
There are few things I love more for spring than a super bright, fresh salad. This burrata, asparagus, and prosciutto salad is the perfect appetizer spread for a crowd. but is also hearty enough to eat as a weeknight meal. Creamy burrata is topped with delicious basil pesto and layered on top of peppery arugula, roasted asparagus, salty prosciutto, cherry tomatoes, and perfectly sweet melon balls. The salad is served with a side of warm, crusty bread that is perfect for scooping up your favorite combination of ingredients. There are so many layers of flavor in this dish and possible combinations to try with each bite! We served this as an Easter brunch appetizer and it was the perfect starter for our meal. It's also SUPER quick and easy to throw together! I can see this being a regular meal this summer on the patio for sure!
