Lunchbox Salads: Italian Chopped Salad
I'm excited to partner with Webstaurant Store to share my favorite recipes for easy, packable lunch salads! Each week I'll be sharing a different salad idea that you can make ahead for an easy week of healthy lunches. Webstaurantstore.com is my go-to for all my disposable containers that make lunch prep so easy + keep my fridge looking so organized! I used some of their smaller disposable containers in one of my most popular posts about packing a full week of healthy snacks + lunches here.
I recently picked up some larger, open containers for salads. Webstaurant Store has SO many options available for any type of food or meal you might want to pack up and since they are disposable, there's no clean-up, dish washing or fuss (but these are also sturdy enough that you can handwash and re-use them if you want!). This is an option that makes my meal prep so much easier and more practical since I don't have to worry about tracking down tupperwares and tops, and constantly washing them before I can prep my next meal!
The first salad up is an Italian chopped salad: loaded up with salami, pepperoni, cheeses, veggies, pine nuts, + topped with a homemade olive oil + vinegar dressing! This is super easy to prepare as most of the ingredients are ready to go from the grocery and just require a little chopping! You can even make a few salads at once while all your ingredients are out. Check out all the ingredients below:
As always you can feel free to add/substitute/remove any ingredients. I also add a dash of salt, garlic powder, and pepper to the spring mix for a little more flavor. For the dressing I just mixed 2 parts olive oil to one part balsamic vinegar in a small mason jar and then added a teaspoon or so of freshly chopped oregano (about 1/4 to 1/3 cup of dressing should be enough for your salad).
Combine all your ingredients on top of your spring mix (excluding your dressing) and you have a delicious, healthy, + filling lunch ready to go! You can even place your sealed jar of dressing inside your box so you are sure not to forget it! You can easily make a week's worth of salads in under 30 minutes and be ready for a week of healthy eating. Even better, these homemade salads cost about 1/3 of what you would pay for a salad at a restaurant, so you are also saving a ton of money!
