Kentucky Pancakes with Bourbon Maple Syrup
I'm thrilled to share a small collaboration with another local blogger who I have been admiring, Nikki from The Coal Miner's Bride. She is always whipping up THE MOST delicious looking treats so I sent her some of our Kentucky cookie cutters and asked if she would use them in a recipe. What she came up with was even better than I had hoped for and even fit perfectly with the Kentucky theme. I present to you- Kentucky pancakes with Bourbon Maple Syrup! What a unique way to use cookie cutters and a perfect, fun breakfast for the upcoming holidays! I can't wait to try it out myself. I've included her full recipe below!

Here's an excerpt with the complete recipe from her blog post (you can find Nikki's complete blog post here):
"I used my new cutters this morning by making Kentucky pancakes which are the cutest pancakes I have ever made. If you’re having guests over for the holidays, treat them in the morning with these Kentucky pancakes and I promise you’ll leave a lasting impression.
Pancakes
1 egg, beaten
1 cup all-purpose flour
2 tablespoons sugar
1 teaspoon baking powder
2 pinches of salt
1 cup milk
In a large mixing bowl, beat egg. Add the remaining ingredients in order then use a fork to combine until most to all lumps are smooth.
Heat a nonstick pan over medium heat. Place Miss Molly’s Kentucky Cookie Cutters on pan and spray with nonstick spray.Using a small spoon, carefully spoon mix into cutters, filling the cutter about 1/3 of the way full. Cook first side for one minute and 30 seconds with the pan covered. Flip the cutter with a spatula and cook the other side for 2 minutes with the pan covered.
Remove cutters from the pan. The cutters will be very hot so using one hand and a kitchen towel, hold the cutter and use your other hand to gently push the pancake from the cutter. The nonstick spray will help with clean release.
