Easy Weeknight Dinners with Kroger Prep + Pared Meal Kits

Today I’m sharing about an exciting new offering that has popped up recently at our local Kroger stores! Kroger’s new Prep + Pared Meal Kits contain everything you need in one small box to whip up a delicious and healthy meal for two in 20 minutes or less! All the ingredients are fresh, pre-measured, and ready-to-go! Prep + Pared kits are brand new to Kroger and only available currently in select stores in the area (lucky us!). Several of the Lexington and Louisville Kroger locations are offering these kits, and we found ours at the Versailles Kroger location.
We tried the Peruvian Salmon Prep + Pared Kit which came with a generous side of Quinoa salad and a fresh garnish of avocado. It was SO fresh and delicious but also incredibly easy to make! I loved having all the ingredients already gathered together, measured (even the spices), and almost everything was already chopped too! These meals definitely don’t skimp on the servings- we had very generous portion of quinoa salad as well as a large piece of salmon for each of us! Each Prep + Pared kit comes with a large print-out that has easy step-by-step instructions for you to follow making the entire process a breeze from start to finish!
The first step in making our meal was to mix up the marinade. We combined two of the packets of the provided garlic vinaigrette dressing with the pre-measured spices and the chopped red pepper, then poured the mixture over the salmon. We let the salmon marinate for about 10 minutes, which was just enough time to work on the rest of the dish!
Next we poured the quinoa (which was already cooked and measured!) into a medium bowl and combined it with the tomatoes, onion, olives, and chopped cucumber. The cucumber was the only thing in the entire box that we had to chop for this recipe. We topped the quinoa salad with the last packet of dressing, a squeeze of lime, and a pinch of salt and pepper, then tossed to combine.
Next, we started heating a pan on the stove for the salmon. While that was warming up, we sliced up the avocado. When the pan had reached medium to high heat, we seared the salmon on each side. After searing, we then added the rest of the marinade on top and finished cooking the salmon. We plated the cooked salmon first, topped it with a bit of fresh sliced avocado, and then added the quinoa salad right beside it.
Not only was this meal super healthy, fresh, and delicious, but we were easily able to make the presentation beautiful and so impressive by just following the simple instructions (just one of the perks of having these kits designed by chefs)! The cool + bright quinoa salad was the perfect compliment to the zesty salmon marinade, and the addition of avocado added beautiful color and a touch of fresh flavor! I’m all about easy cleanup too and having just the right amount of ingredients in one box eliminated trips back and forth to the pantry and fridge for cleaning up plus there was ZERO waste! I will definitely be picking up these Prep + Pared kits again as a quick and easy go-to meal for busy weeknights! I think the Chimichurri steak will be my next pick!
