Beef Breakfast Board Featuring KY Beef

One of my favorite ways to entertain on weekend mornings is putting together brunch and breakfast boards filled with all my favorite breakfast foods, fresh fruit, and spreads!  There are so many ways to incorporate beef into your breakfast spread, even though many don’t think of it as a traditional breakfast staple!  I put together a delicious beef breakfast board featuring a couple of amazing beef brunch recipes and all the trimmings to accompany them!  The beef sausage gravy I included is both easy and mouthwatering (especially when paired with a fresh biscuit or piece of sourdough toast!), and the super easy beef and potato hash is equally tasty and definitely a crowd pleaser!  You can find even more beef brunch recipes to include in your own board on Kentucky Beef’s website here.  This is such a fun way to entertain this summer for a crowd for brunch or breakfast!  Find everything you need to make your own listed below!

Ingredients:

2-3 grapefruit

3-4 oranges

4-5 eggs (cooked to your preference- we fried ours!)

1 large bunch of green grapes

2-3 avocados

10-12 biscuits (you can buy these pre-made or make your own- I used Grands)

6-8 pieces of sourdough bread (toasted)

One jar of jam of your choice (we used blackberry)

1 stick of salted butter

One serving of beef sausage gravy (ingredients/instructions listed at link)

One serving of ground beef potato hash  (ingredients/instructions listed at link)

Mixed greens and sprouts (for garnish)

Instructions:

1. I started by slicing up the oranges and the grapefruits, leaving a couple larger wedges of each.  I placed these on each corner of the board and arranged in little clusters.

2. Next I added round medium sized bowls to hold the beef sausage gravy and ground beef potato hash on each end of the board, right at the edges of the oranges/grapefruits.  I prepared each of these recipes according to the instructions listed at the links above but waited until right before serving to add them each to the bowls.  I sprinkled each with a little additional ground beef as topping and added a fried egg as well to the top of the hash.

3. I added the biscuits and toast next.  I did one pile of biscuits on each end of the board, around the bowls.  I separated a few of each of the biscuits as well into halves and made small piles.  I laid the toast in a fan shape in front of the hash bowl.

4. I fried my eggs and carefully added them to the center of the board (you could also scramble your eggs, poach them, or cook them however you like!).

5. I sliced the avocado and added to the left of the eggs in a small pile. 

6. Next, I added a stick of butter on the other side of the eggs, in between the toast and biscuits.  

7. Finally I added a couple clusters of grapes to each end of the board to fill in empty spots.

8. I finished by garnishing the edges and any blank spots of the board with mixed greens and sprouts!  Don’t forget to also add some serving pieces like knives, spreaders, and spoons for the jam, butter, hash, and gravy!
