Easy + Delicious Soup Recipes Using Trader Joe’s Roasted Red Pepper + Tomato Soup - Part 3: Cacio E Pepe Ravioli + Tomato Soup!

Today I am sharing the third and final recipe using Trader Joe’s Roasted Red Pepper + Tomato soup; honestly, it could be my favorite! Like my previous recipes, this quick and simple recipe takes very little time and is a great weeknight dinner that your family will love!

This soup recipe combines a few of my favorite Trader Joe’s ingredients to create the perfect cozy recipe for those cold winter days (and nights!) If you haven’t seen the first two recipes, you can find them by clicking on the links below!

Ingredients:

  • 1lb ground pork

  • 1 box Trader Joe’s Tomato and Roasted Red Pepper Soup

  • 1 pack of Trader Joe’s Cacio e Pepe Ravioli

  • 1/2 cup of Trader Joe’s mirepoix mix (or chopped onions, celery, and carrots)

  • 1-2 tbsp of garlic

  • Olive oil

  • Italian seasoning and garlic pepper to taste

  • Trader Joe’s focaccia bread (optional)

  • Parmesan Cheese (optional)

Instructions:

  1. Cook ravioli according to the package instructions, drain and set aside.

  2. While the ravioli is cooking, saute your mirepoix mix in 1/4 a cup of olive oil. Add 1-2 tbsps of garlic and Italian seasonings to taste.

  3. Add pork into the mirepoix mixture and continue to cook until the porked is cooked thoroughly. (You may need to add a little more olive oil before adding the pork if your mixture starts to dry).

  4. Add a couple of handfuls of kale into the pork mixture - it only takes a few minutes for the kale to tenderize.

  5. Add the tomato soup to a large pot and warm up on medium heat.

  6. Add the ravioli to the tomato soup and stir to combine.

  7. Add your pork mixture to the soup and stir until combined.

  8. Optional - heat olive oil in a skillet on medium heat. Slice and grill Trader Joe’s Focaccia bread, flipping until each side is slightly browned.

  9. Top your soup with a slice of grilled focaccia and Parmesan cheese!
