Easy + Delicious Soup Recipes Using Trader Joe’s Roasted Red Pepper + Tomato Soup - Part 1: Spinach Tortellini, Sausage, Kale, + Tomato Soup
Soup season is once again upon us, and if you are anything like me, then you really don’t mind it! One of my favorite soups from Trader Joe’s - the Roasted Red Pepper and Tomato soup - is delicious on its own. However, you can elevate this soup with only a few simple ingredients to create an easy weeknight dinner that you and your family will love! Over the next few days, I’ll be sharing THREE different ways you can elevate this soup and how you can make it a little extra festive with some Valentine’s Day serveware!
The first recipe I will share combines kale, spinach tortellini, pork, and, of course, the roasted red pepper and tortellini soup!

Ingredients:
1 box creamy tomato and roasted red pepper soup
2-4 handfuls of kale
8 oz ground pork
1 package of spinach tortellini
garlic, salt, pepper, and Italian seasoning to taste
Parmesan Cheese (to garnish)
croutons (to garnish)
Instructions:
Start by cooking the tortellini according to the package instructions.
Saute your pork with garlic, salt, pepper, and Italian seasonings in a hot pan with olive oil until cooked through and crumbly.
Add a couple of handfuls of kale to your pork skillet and cook for a few minutes on low/medium heat. Stir constantly.
When your tortellini has finished cooking, drain and set aside.
Add the creamy tomato and roasted red pepper soup to the same pot you cooked your tortellini in. Then, add your tortellini back in!
Add the pork and kale mixture to your tortellini soup!
Top with parmesan cheese and croutons!
