Mint Julep Fruit Salsa
This bright, fresh, and flavorful fruit salsa is the perfect addition to your Kentucky derby party spread! I have to admit I’ve always kind of scoffed at the idea of fruit salsa, but this recipe definitely changed my mind! The addition of the bourbon and mint gives this such a great depth of flavor and I was literally just eating it with a spoon! Serve with some sweeter crackers or chips (cinnamon pita or tortilla chips are ideal) or eat all alone! This one is SO quick and easy to throw together- find all the ingredients and instructions below!

1 cup pineapple diced or tidbits (I used canned tidbits)
1/2 cup granny smith apple, diced
1/2 cup chopped/diced strawberries
1/2 cup diced pears (I used canned, already chopped)
3 tablespoons of lime juice
2 tablespoons chopped mint
2 tablespoons bourbon
Combine all ingredients,minus the mint, in a large mixing bowl. Stir to combine.
Mix in 2/3 of the mint and stir until well combined.
Transfer to your serving dish and sprinkle the top with the remaining mint.
Serve (delicious with cinnamon pita or cinnamon tortilla chips) and enjoy!
