The Easiest 3 Ingredient Trader Joe's Dinner

This is one of my all time favorite recipes that I’ve shared a lot of different versions of. Any combination of Trader Joe’s Roasted Red Pepper Tomato Soup and Tortellini is delicious! I added kale to this one and topped with Parmesan Crisps and shaved Parmesan (also from Trader Joe’s). This is truly the coziest, perfect winter meal! Read below for the instructions for the perfect easy weeknight meal!

  • 1 carton (32 ounces) of Trader Joe's Tomato + Roasted Red Pepper Soup

  • 1 10 ounce package of cheese tortellini (I also used Trader Joe's)

  • Shredded Kale (I bought a 10 ounce bag, you can add by the handful as much as you’d like)

  • Optional Toppings:

    • Parmesan Crisps and Shaved Parmesan

1. Bring a pot of salted water to a boil, then add the tortellini.

2.  Cook the tortellini for 5-7 minutes, then drain.

3.  While the tortellini is cooking start heating up your soup: Add the entire carton of soup to a saucepan and warm on medium heat.

4.  Add the cooked and drained tortellini to your soup.

5. Add shredded kale by the handful.

6.  Continue to heat your soup until it reaches your desire temperature, then reduce to simmer.

7. Serve topped with parmesan crisps and shaved parmesan.
