Crockpot Chicken Taco Chili

I just couldn't wait any longer to make my first batch of chili for the season.  I love using the crockpot year round, but it always seems to get the most use in the fall/winter months with all the delicious soup and chili options.  This recipe is one of my staples that I have made again and again because it's equally delicious and easy.  You literally just dump about 6 canned ingredients all into the crockpot with some seasonings and chicken and you are done! The hardest part of the entire cooking process is opening all the cans! 

Here's you need to whip up your chili: 

1 can black beans (15 oz)

1 can kidney beans (15 oz) 

1 can whole kernel corn (15 oz) 

2 cans diced tomatoes with chilies (10 oz each)

1 can tomato sauce (8 oz)

3-4 boneless skinless chicken breast (about 1.5 lbs)

2 tablespoons chili powder

1 1/2 tablespoons cumin

1 teaspoon garlic powder

1 teaspoon pepper

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon paprika

1 teaspoon kosher salt 

some of our favorite toppings (optional):

shredded cheese

sour cream

crushed Doritos (yes!, Fritos are good too.)

sliced pepper rings

fresh chopped cilantro

 

Your first step is to open all the cans: black beans, kidney beans, corn, tomato sauce, and diced tomatoes.  Drain the corn, black beans, and kidney beans and then dump them in the crockpot.  Add the tomatoes and tomato sauce next.  combine and mix all your spices together in a small bowl.  Add your chicken to the crockpot and sprinkle the entire crockpot of ingredients with your spice mixture.  Stir everything together before you turn the crockpot on.

 Cook on high for 6 hours or low for 10 hours.  Shred the chicken before serving and then stir it back in with the chili.  

We do not skimp on the chili toppings in our house!  Some of our go-to's: shredded cheese, sour cream, fresh chopped cilantro, sliced pepper rings, and crushed Doritos.  Yes, you read that correctly, Doritos make everything more delicious including chili, and they add just the right amount of crunch too.  This chili has a hearty and zesty flavor without being too spicy and is the perfect comfort food for fall and winter evenings.  I hope you enjoy it as much as we do (and please don't be scared to try the Doritos too!)
