3 Ingredients Low-Carb Baked Meatballs

Today I’m sharing one of my tried and true EASY recipes that is also so delicious. This is a dinner the entire family will love and can enjoy and it’s also healthy! These baked meatballs have just 3 main ingredients and also make for great leftovers. You can make a big batch and reheat for an easy lunch or dinner any time. Serve with your favorite pasta sauce and pasta or over zucchini noodles or spaghetti squash! Find all the ingredients and instructions for whipping these up below!

makes about 35 meatballs

1.5 pounds ground beef

2 eggs

3-4 cups chopped spinach (you can also sub any other chopped leafy greens)

2 tablespoons minced garlic

1 teaspoon salt

1 teaspoon pepper

1/2 teaspoon red pepper flakes

1 teaspoon Italian seasoning

  1. Preheat oven to 475 degrees.

  2. In a mixing bowl or stand mixer, add all ingredients.

  3. Mix well until everything is well combined

  4. Roll mixture into golf ball sized meatballs and place on a baking sheet covered in foil and greased.

  5. Bake 15-20 minutes until browned at the edges (you may want to flip halfway through cooking).

  6. Enjoy with your favorite pasta sauce and pasta or zucchini noodles!

  7. You can also easily save these in the fridge and reheat later too.
