for one bowl:
1/2 cup taco ground beef (recipe here)
1-2 cups rice of your choice (I used microwavable white rice to make it super easy!)
1/2 cup black beans
1/2 to 1 cup salad greens of your choice (I used baby arugula)
fresh avocado slices/wedge
1/4 cup sliced/diced bell pepper
1/4 cup pico de gallo or salsa of your choice
top with shredded cheese of your choice (I used Monterrey Jack)
optional: add sour cream or your choice of dressing (any kind of cilantro/lime ranch would be delicious!)
Place your rice first in the bowl then top with the ground beef
Next add the black beans and salad greens.
Top with fresh avocado. pico, and bell peppers.
Finish by sprinkling with shredded cheese!
Optional: Toss with sour cream or your choice of dressing!
Stir up and enjoy!
