Easy Penne Pesto Pasta with Chicken, Pinenuts, + Sundried Tomatoes

Last week I shared another recipe that is inspired by a local Kentucky restaurant, Bella Notte. This is super easy to put together and tastes delicious! If you don’t have the exact ingredients listed below, feel free to improvise with whatever ingredients you have in your pantry. This also works great as leftovers and is just as tasty heated back up!   • 1 package of pasta (any kind will do, but I used penne)

  • 6-8 oz of pesto sauce

  • 4 oz of butter

  • 1/4 cup of olive oil

  • 1/3-1/2 cup of pine nuts

  • 5-6 oz of sun-dried tomatoes (cherry tomoatoes can also work)

  • 1-2 cups cooked/grilled chicken

  • Salt & pepper to taste

  • Parmesan cheese

  • Arugula (optional to garnish)

  • Prepare pasta to package instructions (al dente is best so pasta sauce will stick!)

  • Add olive oil to a skillet and add chicken, salt, pepper, and garlic and cook

  • In a saucepan, add 1 jar of pesto sauce, 4 oz of butter, and 1/4 c. of olive oil and combine together on medium heat

  • Next, add 1/2 jar of sun-dried tomatoes to the sauce - make sure you drain the excess oil

  • Add 1/3-1/2 c. pinenuts to the sauce - cook down on low-medium heat

  • Combine pasta to the sauce and thoroughly mix together - then add the chicken

  • Sprinkle with salt, pepper and top with Parmesan cheese and arugula and serve!
