Berry Cheesecake Popsicles

I'm kicking off the 4th of July weekend a little early by making the most quintessential summer dessert, popsicles!  Even better, these popsicles are perfectly patriotic: filled with red, white, and blue!  These are a dessert that your entire family will enjoy and you can easily whip them up for an entire crowd! There are only a few ingredients and just a couple of steps, then you let your freezer do the rest!  You can find the full ingredients list and instructions below:  

1/3 cup whole milk

8 ounces cream cheese

1/4 cup sour cream

1/2 cup powdered sugar

3/4 cup fresh raspberries

3/4 cup fresh blueberries

about 4-6 graham crackers, crumbled

1. Add milk, sour cream, cream cheese, and powdered sugar in a blender or food processor and blend until smooth.

2. Gently mix in your raspberries, blueberries, and crumbled graham crackers (I rinsed my berries well before adding so that they wouldn't turn my batter purple!).

3. Pour the mixture into your popsicle molds.  I used smaller molds and was able to make about 12 popsicles (with a little mixture left over). Insert popsicle sticks into the center of each mold. 

4. Freeze until solid.

5. Remove from freezer and serve immediately.  If you have trouble removing your popsicles from the molds, run both sides of the mold under hot water for a few seconds then try again.  Mine were really frozen and I had to run them under hot water for a minute or so on each side!

Even though I am not a huge popsicle or icecream fan, I AM a huge fan of cheesecake, so these were a winner in my book!  They are so rich and creamy, melt in your mouth, and the fruit adds the perfect amount of brightness.  I also love the little bit of crunch and contrasting flavor that the graham crackers add.  I can't think of a cuter dessert to serve at your 4th of July cookout or pool party!  Enjoy and have a wonderful holiday weekend!
