Favorite Fall Squash Recipes

1. Roasted Butternut Squash, Red Pepper, + Bacon Soup

This is the ultimate fall soup with layers of flavor and a creamy texture.  The smoky bacon flavor gets completely infused into the soup when you roast all the vegetables together with the bacon on top.  I love topping mine with a sprinkle of feta, chives, croutons, and even more bacon!  

2. Roasted Autumn Vegetables with Bacon + Balsamic


My go-to for preparing vegetables all fall + winter!  Tossing the vegetables with seasonings, balsamic, and olive oil, before roasting allows the vegetables to really soak up all the flavors- no bland veggies here!  The pine nuts and bacon add the perfect amount of texture and crunch which really takes this recipe up a notch!

3. White Cheddar Mac + Cheese Stuffed Acorn Squash

One of my all-time favorite fall recipes!  The mac and cheese is SO good that it could stand alone, but when combined with these beautiful roasted acorn squash it creates the perfect autumn dinner.  A sprinkle of toasted breadcrumbs on top adds just the right amount of crunch!

1. Greek Porkchops with Squash + Potatoes

My husband's favorite dinner- he would seriously eat pork for every meal!  This is a super easy recipe that you can put together in just a few minutes, marinate during the day, and then toss in the oven just in time for dinner.  The fresh, lemony marinade makes both the vegetables and porkchops SO flavorful and keeps the porkchops incredibly moist inside while the outside gets just a little charred.

5.  Spaghetti Squash Lasagna

A great low-carb dinner that will please even the pickiest of eaters.  The hearty meat sauce is made with ground pork and pancetta and is super flavorful.   Layers of roasted spaghetti squash, vegetables, and meat sauce, are topped with a healthy serving of mozzarella cheese and fresh basil.  Turn your oven up to broil for the last couple of minutes to get the cheese super bubbly and slightly browned on the top!

6. Autumn Butternut Squash, Kale, + Prosciutto Pizza


Another super easy dinner and you can get all the ingredients at your local Trader Joe's.  Their ready-to-bake garlic and herb pizza crusts are the perfect base for this autumn pizza.  The slightly sweet butternut squash, salty prosciutto, and crispy kale create the most delicious combination of flavors.
